Spaghetti Carbonara

Have you ever wished for this lovely pasta dish to be less "creamy"? This is an easy recipe, and you don't need any cream for a healthy diet.

1. Cook dried spaghetti in salted, boiling water until al dente.

2. Meanwhile, fry some bacon with heated olive oil (just the normal one, not virgin). Pour in half a glass of white wine (optional) and let it simmer until the wine reduces by half.

3. At the same time, beat two eggs in a large bowl (large enough to hold all the pasta). Then add to it chopped parsley (preferably italian ones) and grated parmesan cheese (half a cup each), season with salt and freshly grated black pepper.

4. When the pasta is done, drain using a colander, then leave to cool for 30 seconds before pouring into the bowl of egg mixture. The heat of the pasta should be enough to just cook the egg but not too hot to make it curd. Turn off the heat of the frying pan (with bacon in) and pour the pasta into the pan. Mix well. Serve.
